Peanut Butter and Honey Kettle Corn


I was very impressed by idea of mixing honey and PB with popcorn when I saw this recipe on Warm Vanilla Sugar. I figured the only way to make it better was to make it with kettle corn! But if you're using microwaved or air popped popcorn, you can stick with normal popcorn and I'm sure it will still be amazing.


PEANUT BUTTER AND HONEY KETTLE CORN
Adapted from Warm Vanilla Sugar

~1/2 or 3/4 cup popcorn kernels + 1 tbsp veg oil + 2 tbsp sugar + 1 tbsp salt = ~5-6 cups popped kettle corn
1/3 cup sugar
1/2 cup honey
1/2 cup peanut butter
1/2 tsp vanilla
Make the kettle corn! It's the same as normal stovetop popcorn except add the sugar in right before the kernels. Put it in a big bowl and mix some salt.

Bring the sugar and honey to a rolling boil in a small saucepan. Pour into a small mixing bowl and stir in the peanut butter and vanilla. Pour the mixture over the popcorn and mix with spoons or your hands until evenly coated.

Prepare a baking sheet by covering with wax paper. Spread out the popcorn over the baking sheet and allow to cool for a few minutes so they don't clump up in the bowl. (If you don't care about that, skip the baking sheet step.)

I was going to take a picture of the popcorn in a bowl, but we ate it too fast.
