Blueberry Cream Biscuits


My grandma had a garage sale this Saturday morning, so I made some biscuits for breakfast. The garage sale was not a huge success, but the biscuits were.

Blueberry Cream Biscuits
From Better Homes & Gardens

2 cups flour
2 tsp baking powder
2 tbsp sugar
½ tsp salt
¼ grated nutmeg
1 cup blueberries
1 ½ cups whipping/heavy cream
1 recipe Blueberry Sauce
Preheat oven to 425. In a large bowl, stir together the flour, baking powder, sugar, salt and nutmeg. Toss in the blueberries. Gently stir in the cream until just moistened. Knead dough a couple times in the bowl until it forms a loose mass.

Place dough on a parchment paper lined baking sheet. Form dough into a rough rectangle, about 1 inch thick. Use a knife or pizza cutter to pre-cut the biscuits, probably about 12. Bake for 17-20 minutes. Cut or pull apart to serve.

Blueberry Sauce
1 cup blueberries
1/3 cup sugar
2 tbsp water
1tsp vanilla
1 cup blueberries

In a medium saucepan, combine blueberries, sugar and water. Bring to a simmer and cook, stirring, until blueberries pop and sauce has thickened. Remove from heat and stir in vanilla and other blueberries. (I didn’t add in any more because I was out.) Serve warm with the biscuits.
