Blueberry Muffins


We went blueberry picking at Reilly's Summer Seat Farm on July 4th and now we have a lot of blueberries!



BLUEBERRY MUFFINS

Adapted from Allrecipes.com

1 1/2 cups whole wheat flour (or all-purpose)

3/4 cups sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup veg oil (or coconut canola oil if you live with Michelle... and if you're reading this, you probably do live with Michelle)
1 egg
1/3 cup milk
1 cup fresh blueberries

1/2 cup white or brown sugar

1/4 cup flour
1/4 cup butter, cubed
2 tsp cinnamon
1/4 cup oatmeal (optional)
Preheat oven to 400 and line or grease a muffin pan. In a large bowl, mix the flour, sugar, salt and baking powder. Get a 1 cup measuring cup and put the 1/3 cup vegetable oil in, then the egg, then fill to the top with milk. Mix it into the dry mix and fold in the blueberries. Fill about 8 muffin cups.

Make the crumble topping: Mix the sugar, flour, butter, cinnamon and maybe oatmeal with a fork. Sprinkle it over the muffins. 


Bake for 18-20 minutes.
