A beautiful spring-y grilled cheese! Normal grilled cheese is great with tomato soup on a nasty cold day (like every day for the past million years or so...) but this grilled cheese is for spring.
Adapted (a lot) from Cookie + Kate
Double or triple, etc., for more than 1 sandwich
2 slices bread
2-3 strawberries, sliced
1/4 white onion, sliced
5-6 leaves fresh spinach
1 tsp balsamic vinegar
1 tsp honey
1 tsp butter
Slather goat cheese over one side of each slice of bread. Either scrape the other side with butter or just coat your skillet or griddle with butter. (I use a cast iron skillet.)
Layer the strawberries, spinach and onions on one of the cheesy bread slices. Pour the balsamic vinegar and honey on the other side. Put the sides together and grill both sides until browned how you like it!
Note: In the original recipe, they call for a balsamic vinegar and honey dipping sauce, but I just added that to the sandwich to avoid having to dirty another pan. However, they suggest saving some sauce for drizzling over Greek yogurt, vanilla ice cream, pizza, peaches and berries, which sounds pretty amazing. So:
"To make the balsamic honey sauce, combine the balsamic vinegar and honey in a small saucepan over medium-low heat. Simmer, stirring constantly, until the liquid is reduced by about half (15 minutes or more). Pour the liquid into a small bowl to cool."
