Ingredients:
- 1 Package cremini mushrooms (baby bellas)
- 1 Tbs olive oil
- Salt & Pepper to taste
- 2 Garlic cloves, thinly sliced
- Cooking spray
- 2 Tbs dry sherry
- 2 tsp chopped fresh oregano
- 8 Ounces (1/2 box) uncooked elbow macaroni
- 1/4 Cup all-purpose flour
- 1 Small can evaporated milk
- 1 Cup shredded fontina cheese (I used cheddar instead)
Instructions:
- Preheat oven to 450F
- Combine mushrooms, olive oil and garlic on baking sheet covered in cooking spray. Season with salt & pepper
- Bake at 450F for 15-20 minutes until mushrooms are browned
- Cook pasta as directed on box
- When mushrooms are done cooking, put in a bowl with sherry and oregano
- Keep oven on, but decrease to 400F
- Add flour and evaporated milk in a large pot and stir with a whisk; Cook over medium heat until thick and bubbly
- Add the cheese, salt and pepper
- Remove from heat and stir in the mushroom mixture and pasta
- Put the pasta mixture into a baking dish and bake for 25 minutes
- Sprinkle with oregano leaves and enjoy!
